Eunice Lee Singleton Pollock, age 89, of Hardinsburg, KY, passed away on Monday, December 1, 2025, at Hardinsburg Nursing and Rehab.
She was born on August 27, 1936, in Wolf Creek, KY, daughter of the late Lawrence Albert Singleton and Fayme Nell Pleasant Singleton. Along with her parents, she was preceded in death by her husband, John Henry Pollock, Sr.; daughters, Pamela Kay Frederick and Bonnie Marie Curl; grandson, David Frederick; and siblings, Jessie, John, Chester, Earl, Henry, and Charles Singleton, Ethel Netwon, Ruth Addison, Lorena Padgett, and Virginia Vandiver.
Eunice had a fiery spirit and a quick wit that could light up any room. She had a way of saying exactly what needed to be said, sometimes with humor, sometimes with grit, but always with truth. She loved God deeply and lived her faith in quiet, steady ways. Her prayers were constant, her presence was comforting, and her trust in the Lord carried her through every season. Eunice worked hard her entire life, whether it was making a home for her family, tending to her land, or taking care of her cattle. She poured her strength, resilience, and love into every acre and every animal. Her beautiful quilts were made with the same love and warmth she gave so freely to others. She was a devoted mother, grandmother, sister, wife, aunt, and friend, and will be dearly missed by all those who were blessed to know her.
She is survived by her children, Carlette (Harry “Bill”) Miller of Guston, KY, and John Henry Pollock, Jr. and James “Jimmy” (Emily) Pollock of Battletown, KY; son-in-law, Robert M. Frederick of Palmyra, IN; grandchildren, Terri (Charlie) Smith, Amy Humphrey, Michael (Crissy) Frederick, Bobby Frederick, Nicholas Pollock, Elizabeth Pollock, Ryan and Brandon Frederick, William Matheis, and Robert G. Frederick; 13 step-grandkids; 16 step-great-grandkids; her church kids; and a host of nieces and nephews.
Visitation will be held at the Bruington-Jenkins-Sturgeon Funeral Home on Thursday, December 4, 2025, from 3:00-7:00 P.M. and will continue Friday from 9:00 A.M. until the time of the service.
Funeral services will be held at the funeral home on Friday, December 5, 2025, at 11:00 A.M. with Bro. Tom Bridge officiating. Burial will follow in Parr-Frans Cemetery next to her husband.
